Tuscan Summer Salad

I mentioned a recipe for a Tuscan Grilled Salmon the other day and my lack of time to prepare it that daytuscany-patio. I went with a quick grilled salmon which was fine but not the Tuscan variety.

The salmon got me thinking of Tuscan recipes that are seasonally appropriate and a bit easier to put together. The Tuscan Summer Salad is one such dish

Tuscan Summer Salad


2 pounds of grilled boneless chicken breasts- cubed
2 cups cooked , drained fresh fava beans
1 cup diced red onions
½ cup diced red bell peppers
!/2 cup diced celery
½ cup minced Italian parsley
½ cup extra virgin olive oil
2 tablespoons red wine vinegar
3 cloves roasted peeled garlic
1 teaspoon fresh thyme
Salt & pepper to taste
2 heads radicchio
¼ pound thinly sliced Parmesan Reggiano
Coarsely ground pepper


Combine all ingredients except:
Radiccio, cheese, coarse pepper
Cover and allow to marinate for about 1 hour
Wash and dry the radicchio then slice into a very fine julienne


Place the chicken salad in the center of a chilled serving plate
Sprinkle with with radicchio and cheese
Coarsely grind pepper over salad as a final touch

Serve at once
